WEST NORWOOD EATS TOGETHER
Join Network Norwood in cooking a shared #StayHomeSundaySupper

On Sunday 3 May lets all cook a simple tasty bean chilli and share our photos and videos

Recipe for West Norwood Bean Chilli, feel free to adapt
Serves 4 generously

Ingredients
1 red pepper de-seeded/chopped
1 red onion chopped
250g chestnut mushrooms, chopped
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon chilli flakes
1 teaspoon smoked paprika
1 teaspoon sea salt
1 tablespoon olive oil
1 can cannellini beans
1 can black beans
1 can kidney beans
2 cans chopped tomatoes
200ml vegetable stock

Method
Mix: pepper, onion, mushrooms, spices, salt, oil and roast uncovered in a deep pan for 25 minutes at 200c / 180c (fan) / gas mark 6.

Drain and rinse the beans and add along with the tomatoes and stock to the pan and stir. Leave uncovered and cook for 35 minutes.

Serve with rice/salsa/avocado/cheese/tortillas
